my mother’s banana bread
i’m not a huge bread fan, but this one takes the cake. it’s moist, sweet, and it’s hard to stop at just one slice. i love the chunky bits of banana inside, and it looks good enough to be served to dinner guests or a gift to a dinner party.
ingredients:
- 0.5 tbsp unsalted butter just to grease the baking dish
- 200g of all purpose flour
- 0.5 tsp of sea salt
- 0.5 tsp baking powder
- 0.5 tsp baking soda
- 113g of unsalted butter
- 2 eggs
- 1 tbsp of grapeseed oil
- 2 tsp of pure vanilla extract
- 4 ripe bananas (separate 1 of them)
instructions:
- preheat oven to 175c and grease the baking dish bottom and sides – i use an 8″ square baking dish
- combine flour, salt, baking soda and baking powder into a mixing bowl
- in another bowl, combine the soften butter and sugar and whisk well
- add 2 eggs (make sure they’re of room temperature), oil and vanilla extract into the butter and whisk
- mash the 3 bananas with a fork and add into egg mixture
- pour in flour mixture into the egg mixture and stir until it’s well blended
- pour the batter into the greased pan and spread evenly
- slice the separated single banana into half and decorate on top of the mixture
- put the pan into the oven and bake for one hour, check if it’s ready by inserting a tooth pick and the center (it should come out clean)
- remove baking dish and let it cool for 20 minutes before slicing
